tough and heavy could be used as adjectives for definate as they are describing words

"That" can be used as a pronoun because it can replace a noun in a sentence.

For example: 

Here's a sentence with a NOUN:

The phone belongs to her.

The noun (phone) in the sentence above can be replaced with "that" and still make sense:

That belongs to her.
